Preparation time: 30 minutes

Baked brussels sprouts

  • Brussels sprouts (cut in halves or quarters if needed)
  • olive oil
  • salt and pepper

Bake them at 180 degrees for approx. 20 minutes.

Lemon emulsion

  • 3 peeled lemons
  • 2 tbsp water
  • 2 tbsp olive oil
  • 2 tbsp maple syrup
  • a pinch of salt

Bring a little water to the boil in a pan and cook the lemon peel in it for approx. 5 minutes. Make sure there is as little white pith on the peel as possible. Take the peel out of the water. 

Cut the lemons into quarters and remove the seeds. Mix all the ingredients except the oil in a blender until smooth. Finally mix in the oil by hand.
