Preparation time: 50 minutes

Cake

  • 2 cups spelt flour 
  • 1 teaspoon baking soda 
  • 1 teaspoon baking powder 
  • a pinch of salt 
  • 3 tablespoons ground poppy seeds 
  • ½ cup maple syrup 
  • ⅓ cup olive oil 
  • 1 cup water 
  • ¼ cup lemon juice 
  • zest from 2 lemons 

Mix all the dry ingredients in one bowl and all the wet ingredients in another. Pour the wet ingredients into the dry ones and mix everything well. Pour the mixture in a ring cake baking tin and bake at 180 degrees for 30-40 minutes. When baked, let it cool in the baking tray.  

Take the cake from the baking tray and pour the glaze over it.  

Lemon glaze

  • 2 tablespoons lemon juice 
  • zest from 1 lemon 
  • 1 tablespoon coconut oil 
  • 2 tablespoons oat milk 
  • ¾ cup powdered sugar 

Mix everything well into a smooth glaze.
