Preparation time: 15 minutes

Ingredients:

  • Chinese cabbage (napa cabbage), roughly chopped
  • Carrots, chopped
  • Dried cranberries
  • Toasted pumpkin seeds
  • Tahini ginger dressing

Tahini ginger dressing:

  • 1 small piece of ginger
  • 2 tbsp tahini
  • ½ lemon, juice and zest
  • Salt and pepper to taste
  • Pinch of cayenne pepper
  • ½ cup water (dependes on how thick you want your dressing)

Place all ingredients in a blender and blend until smooth.
