Prep time: 30 minutes

Cauliflower Steaks 

Marinade

  • a small piece of fresh ginger 
  • 2 tablespoons sesame oil 
  • 1 teaspoon maple syrup 
  • ½ teaspoon ground caraway seeds
  • 1 teaspoon ground coriander 
  • ½ teaspoon ground turmeric 
  • 1 teaspoon ground red pepper 
  • ¼ teaspoon garlic powder 
  • ½ teaspoon cayenne pepper 
  • a pinch of salt 
  • juice from 1 lime 

Mix all the ingredients and put them on the cut cauliflower. 

Bake in an oven at 180 degrees for about 20 minutes.  

Bean Hummus

  • 1 cup white beans, cooked 
  • 2 tablespoons olive oil 
  • ½ teaspoon ground turmeric 
  • salt and pepper to taste 
  • 3 tablespoons water or as needed for mixing 

Puree all the ingredients in a blender.  

Serve with

  • 1 avocado 
  • 1 zucchini 
  • baby spinach 
  • bean hummus 
  • microgreens
