Preparation time: 20 minutes

Ingredients:

  • 1 banana
  • 1 mango, diced
  • 1 cup oats, ground
  • 2 tbsp almond butter
  • 1 cup water
  • 1 pinch of salt
  • 1 tbsp coconut oil for the pan

Add banana, mango, almond butter and water in a blender and blend until smooth consistency. 

Add ground oat in a mixing bowl and pour in the blended mixture. Add a pinch of salt and whisk together everything until you get a smooth pancake batter. 

Fry the pancakes in a pan with a bit of coconut oil. 

Strawberry sauce

  • 2 cups strawberries, fresh or frozen
  • 1 tbsp lemon juice
  • 2 tbsp xylitol (birch sugar)

Add all ingredients in a small saucepan, stir well and cook on a low heat for about 15 minutes. Cool down the sauce. 

*You can store it a sealed jar for up to a week in your fridge. 

Plating

Place some pancakes on a plate and pour over a bit of strawberry sauce and almond butter.
