Preparation time: 10 minutes
- 1 cup pistachios
- ½ cup pumpkin seeds (can be roasted in advance for a more intense flavour)
- ¼ cup ground golden flax seeds
- ½ cup Medjool dates
- ½ teaspoon vanilla extract
- A pinch of salt
- Water if necessary for shaping
Mix all the ingredients in a food processor to obtain a sticky mixture. Shape balls from the mixture, which can be rolled in matcha or other ground toppings.
