Preparation time: 10 minutes

  • 1 cup pistachios 
  • ½ cup pumpkin seeds (can be roasted in advance for a more intense flavour) 
  • ¼ cup ground golden flax seeds 
  • ½ cup Medjool dates 
  • ½ teaspoon vanilla extract 
  • A pinch of salt 
  • Water if necessary for shaping 

Mix all the ingredients in a food processor to obtain a sticky mixture. Shape balls from the mixture, which can be rolled in matcha or other ground toppings.
