Preparation time: 15 minutes


  • 1 beetroot 

Put the beetroot in a spiralizer to obtain noodles from it. In case we do not have a spiralizer, we can cut the beetroot in slices with the potato peeler or grate it. 

Wild Garlic Pesto

  • ½ cup almonds, peeled and coarsely chopped 
  • a bunch of wild garlic 
  • 4 tablespoons olive oil 
  • salt and pepper to taste 

Mix all the ingredients with a spoon in a cup. 

Preparation and plating

Mix the noodles and the wild garlic pesto in a bowl. Serve into small cups.
