Preparation time: 50 minutes

  • 2 cups spelt flour
  • ½ cup coconut sugar
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • a pinch of salt
  • 1 large pear, peeled and grated
  • 1 cup almond mylk
  • ½ cup coconut oil, melted
  • a small piece of fresh ginger, grated
  • ½ cup pecan nuts, coarsely chopped

Mix all the dry ingredients in one bowl and all the wet ingredients in another. Mix the wet ingredients into the dry ones and add the coarsely chopped pecan nuts. Pour the mixture into a baking tray, covered with parchment paper and bake at 180 degrees for 30-40 minutes. Test the bread with a toothpick to see if it is baked. The dough should not stick to the toothpick. 

Cool the bread and slice it.
