Preparation time: 20 minutes

Ingredients:

  • 1 sweet potato, diced
  • ½ endive, torn
  • ¼ radicchio, torn
  • 1 smoked tofu, diced
  • ½ red bell pepper, cut into stripes

Bake sweet potato in an oven on 180 degrees for about 20 minutes. 

In a pan with a bit of olive oil saute bell pepper and smoked tofu. 

Tahini dressing

  • 2 tbsp tahini
  • 1 tsp tamari soy sauce
  • 1 lemon, juiced
  • ¼ cup water (more if you prefer more runny dressing)
  • 1 pinch salt and pepper, to taste
  • 1 pinch ground paprika

Whisk all the ingredients until smooth consistency.

Plating

Use your hands to massage the kale with a tahini dressing to soften it. Place it on a plate, add baked sweet potato and tofu. Sprinkle with some toppings by choice. We added pumpkin and sesame seeds.
