Preparation time: 20 minutes

Ingredients:

•    2 beetroots, cut into slices and roast in the oven

•    1 avocado

•    a bunch of young greens

•    cherry tomatoes

•    pan-roasted tempeh

Dressing 

•    1 tablespoon olive oil

•    1 tablespoon lemon juice

•    a pinch of chili

•    salt and pepper to taste

Mix all the ingredients with a whisk to obtain a smooth dressing. 

Preparation:

Put all the ingredients on a plate or in a bowl and cover with a  dressing.
