Preparation time: 20 minutes

Ingredients:

  • 2 beets, steamed
  • ½ endive, torn
  • 2 cups arugula
  • 2 cups barley, cooked
  • 1 cup kidney beans, cooked

Dressing

  • ¼ cup sunflower seeds
  • ¼ cup parsley
  • ½ cup spinach
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • ½ cup water
  • Pinch salt and pepper, to taste

Blend all ingredients in a blender until smooth consistency. 

Plating

Place all ingredients in a bowl, pour over the dressing and top with different toppings of choice. 

We added:

  • Walnuts, roasted and roughly chopped
  • Sesame seeds
