Prep time: 10 minutes
Ingredients
- 1 bigger bunch of young spinach
- 1 tbsp lemon juice
- 1 tbsp olive oil
- Pinch salt and pepper
Put all the ingredients in a bigger bowl and massage well with your hands, until the spinach becomes wilted.
Toppings we like to add
- Walnuts, roughly chopped
- Dried cranberries
- Pine nuts, toasted
Plating
Place the spinach on a plate and top with toppings by your choice.
