Preparation time: 20 minutes
Ingredients:
- 1 cup black rice
- 1 avocado
- a bunch of winter greens (endive, raddichio, spinach ...)
- ½ black raddish, shredded
- ½ pomegranate
- toasted pine nuts
- 3 tbsp olive oil
- juice of ½ lemon
- a pinch of cumin
- salt and pepper to taste
Plate all ingredients in a bowl. Make a dressing out of lemon juice, oil, cumin, salt and pepper. Top with pine nuts and serve.
