Preparation time: 20 minutes
Ingredients:

  • 1 cup black rice 
  • 1 avocado
  • a bunch of winter greens (endive, raddichio, spinach ...) 
  • ½ black raddish, shredded 
  • ½ pomegranate
  • toasted pine nuts 
  • 3 tbsp olive oil 
  • juice of ½ lemon 
  • a pinch of cumin 
  • salt and pepper to taste

Plate all ingredients in a bowl. Make a dressing out of lemon juice, oil, cumin, salt and pepper. Top with pine nuts and serve.
