- Zucchini, cut with a spiralizer or a potato peeler
- Roasted pine nuts or raw parmesan cheese from pine nuts
Bolognese Sauce from Brown Lentils
Preparation time: 90 min
- 1 cup brown lentils, soaked for at least 4 hours
- 1 onion, chopped
- olive oil
- 2.5 cups tomato paste
- 1/2 cup red wine
- 1 bay leaf
- a pinch of dry marjoram, thyme and oregano
- salt and pepper to taste
Fry the onions in a pan with oil, add the lentils and fry some more. Pour in tomato paste, red wine and add the spices/herbs.
Cook over a minimum heat for at least 1 hour, to make everything come together well and until the lentils become soft. Mix several times while cooking and if necessary pour in a little water or tomato paste.
